Spicy Cranberry Sauce


Spicy Cranberry Sauce

This interesting twist on traditional cranberry sauce is spiked with hot spices: ground ginger, cloves, and black pepper.

1 1/2 cups orange juice
1 1/4 cups sugar
2 packages (12 ounces each) cranberries, fresh or frozen
1 lime, finely chopped with skin, any seeds discarded
1 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon pepper
1/4 teaspoon salt

1 In a large nonaluminum saucepan, bring the orange juice and sugar to a boil over medium heat. Boil until the sugar has dissolved, about 3 minutes.

2 Add the cranberries, lime, ginger, cloves, pepper, and salt. Bring to a boil over medium heat, reduce to a simmer, and cook, stirring frequently, until the berries have popped and the mixture has thickened, about 15 minutes.

3 Let cool to room temperature. Store the sauce in the refrigerator.

Makes 4 cups
