Agliata Sauce

This Italian garlic-based sauce dates back to Roman times. It’s similar to a pesto, but uses stale breadcrumbs for body instead of cheese. Toss with hot cooked pasta; this makes enough to coat 10 ounces of pasta for 4 servings.

2 slices (1 ounce each) stale whole-grain bread
6 cloves garlic, peeled
1/2 cup parsley leaves
2 tablespoons walnuts
2 teaspoons olive oil
3/4 teaspoon salt
1/4 teaspoon red pepper flakes

In a food processor, combine the ingredients. Process until finely ground. Store the sauce in the refrigerator.

Makes 1 1/3 cups
